I know you are already thinking of my recipe for making yogurt but first let us dive into the benefits of drinking yogurt.
Yogurt is a probiotic food which contains millions of essential bacteria like lactic acid bacteria that makes it the most healthful of all the dairy products. The word ‘probiotic’ is a term of Greek origin meaning ‘pro-life’.
Making yogurt is pretty easy; in fact it makes itself owing to the nature of milk.
Any fresh milk contains a modifying lactic acid bacteria which produces spontaneous fermentation if the milk is not kept refrigerated, and even refrigerated after some days it will still ferment.
Should you want to to achieve other specific product or desired kind of more beneficial bacteria, other bacteria is added to the milk these are;
- Lactobacillus bulgaricus and streptococcus thermophilus are used in preparation of common yogurt. These species are not found in your stomach flora and this type of yogurt may not be very useful if one is to improve the balance of the stomach flora.
- Lactobacillus acidophilus also known as LA1 is normally found in human intestine. This strain and streptococcus thermophilus is used in the production of biotic yogurt.
- Lactobacillus acidophilus reaches the stomach alive and it attaches it self to the stomach lining replacing the harmful bacteria, this bacteria also protects the intestinal lining against the harmful bacteria.
Nutritional benefits of yogurt
- It provides a variety of nutrients similar to that of fresh milk
- The nutrients in yogurt is assimilated and absorbed better than those in fresh milk. The bacteria predigests the nutrients during fermentation.
- People with digestive disorders of milk will tolerate yogurt better.
- Yogurt inhibits the growth of bad bacteria and also helps in checking diarrhea in cases of infectious colitis.
- Some studies have also shown that yogurt has a positive effect on allergic eczema
- Regular consumption of yogurt improves resistance against digestive tract infections
- Many studies have also shown that yogurt inhibits the mutation of cancer causing cells it also neutralises the carcinogenic action of certain substances and may protect against breast cancer
Yogurt is more beneficial
- to those who are undernourished
- to the pregnant and nursing mothers
- to those with digestive disorders
- to those with disturbed intestinal flora dueto continuous use of antibiotics or due to fungal infections
- to those with lowered resistance to infections (immunodepression)
